Today I´d like to present you a typical Greek dish: Moussaka

Usually it´s prepared with lamb but since we´re veggies we just took some soya. It´s really delicious.

So here are the ingredients:

  • 500 g potatoes in slices
  • 500 g aubergine in slices
  • a package of soya granulate
  • 4-5 cloves of garlic
  • 2 red onions
  • 1 tin of plum tomatoes
  • red wine
  • salt, pepper, paprika, oregan and 1/4 teaspoon ground cinnamon
  • 2-3 eggs if you like
  • 50 g butter
  • 50 g flour
  • 375 ml milk
  • 105 g Parmesan or Kefalotyri
  • nutmeg
  • olive oil

Method:

Lay the slices of aubergine on paper towels, sprinkle lightly with salt, and set aside for 30 minutes to draw out the moisture.  In the meantime prepare the soya as discribed on the package. Chop the onions and heat them in a large frying pan with some olive oil. Flavor the soya with the herbs and put it in the pan with onions. When the soya is browned put in the wine and tomato sauce and add the garlic. Simmer for a few minutes. Then take another pan and fry the potatoes and the aubergines afterwards with olive oil.

To make the béchamel sauce, begin by melting the butter in a saucepan.  Whisk in flour until smooth. Lower heat and gradually pour in the milk, whisking constantly until it thickens. Season with salt, pepper and nutmeg.

Finally arrange the aubergine, potatoes and the soya-sauce in a large baking dish. If you like the moussaka to be firm you might add some broken egg. Then pour the béchamel-sauce over the top and sprinkle with cheese as pleasured. Bake for approx. 3o minutes.
